ほしいもの表面が白くなるのをご存じでしょうか。
 

この白い粉のようなものは「白粉（しろこ）」といい、カビではなく
さつまいもに含まれる糖分（主に麦芽糖）が結晶化したものです。
 
製造工程でさつまいもを加熱することでデンプンが分解され、麦芽糖が生成されます。
 
その後、乾燥が進むにつれて糖分が表面に現れ、粉が吹いているように見えるようになります🍠
質感としては、ツブツブの結晶化しているものや、サラっとした粉状のものが白粉の可能性が高いと思われます。
 
白粉の発生具合は個体差があり、原料となるさつまいもの出来や収穫状況、干し芋に加工する時期や糖度の違い、また商品の保存環境の気温の変化などが原因と考えられます。

・白く粉状についている
・干し芋全体に自然に広がる
・ふわふわしていない
・甘みが増したような味わい
 
▼ カビの特徴
・青色、緑色、黒色などが見られる
・ふわふわとした綿埃（わたぼこり）のようになっている
・酸っぱいにおいや違和感のあるにおいがする

You may sometimes notice a white powder on the surface of dried sweet potatoes.
This white powder is called “Shiroko” and is not mold. It is crystallized sugar (mainly maltose) naturally contained in the sweet potatoes ✨

During the production process, heating the sweet potatoes breaks down the starch and produces maltose.
As the drying and aging process continues, the sugar rises to the surface and appears as a white coating 🍠

In texture, white sugar crystals or a fine powder-like coating are most likely Shiroko.

The amount of white coating varies depending on each product and may be affected by factors such as the quality and harvest condition of the sweet potatoes, the timing of processing into dried sweet potatoes, sugar content, and temperature changes during storage.

Some customers may wonder if it is mold, so here is how to tell the difference 👇

▼ Characteristics of Shiroko
・White and powdery in appearance
・Naturally spread across the dried sweet potato

・Often associated with enhanced sweetness

・Blue, green, or black discoloration
・Fluffy or fuzzy texture
・Sour or unusual smell
