One of the best foods to enjoy during this season is nukazuke, a traditional Japanese fermented vegetable pickle. 🌿
Nuka, or rice bran, is the nutritious outer layer that is removed when brown rice is polished into white rice.
When rice bran is mixed with salt and water and allowed to ferment, it becomes nukadoko—a fermented rice bran bed used to pickle vegetables.

As vegetables are pickled in the nukadoko, they develop a pleasant saltiness, rich umami, and a delightfully crisp texture. 🥒✨
